Growing up, my mom’s best friend ((and coincidentally my best friend’s mom)) // cheerleading coach used to make these amazingly soft, chewy and melt-in-your-mouth-amazing cookies. I always wondered how she made them and recently, flipping through my hometown cookbook, I stumbled upon Valerie’s Mrs. Carey’s recipe for “cool whip cookies.”
I felt like I had found a secret passage to Narnia.
I’ve had this cookbook for years and never knew it was in there! Now, I renamed them “can’t mess ’em up cookies” simply because I don’t want to mess with trademark issues from using the term “cool whip.” But Val gets all the credit here.
Thanks, Val. Not only did you make my toe-touches what they were in my high school days, but you also made me a cookie addict.
Okay, maybe part of the cookie addiction is my fault. And maybe you don’t want to take credit blame for those toe-touches.
All I can tell y’all is that
1. Val is a genius. 2. You really can’t mess these up.
Enough blabbering. Here’s the recipe.
What you’ll need:1 egg1 container of cool whip1 box of cake mix (chocolate, lemon, and strawberry are all winners)1 tsp vanilla
Directions:1. Preheat oven to 350.2. Mix all ingredients together. It took a while to get the cool whip all incorporated. 3. Place by the spoonful into a bowl of powdered sugar and place powdered sugar side up onto a cookie sheet.4. Bake for 8-10 minutes. 5. Top with more powdered sugar, if desired.
Tips:*Be careful while eating and don’t inhale in too strenuously. The powdered sugar can be painfully hilarious to choke on/breathe in. Don’t act like I didn’t tell you later.*Package them in cute little farmer’s market baskets and cellophane for cute gifting!
