tortilla soup recipe

I have several comfort food recipes that I grew up on and crave more often than any other meals. Usually it’s something warm that my mom or Memaw would make at our request, any time we’d come home from college, etc.  One of my favorites ((because of how easy it is to make and how delicious it is!)) was always my mom’s tortilla soup. 
This recipe makes 6-8 servings. I prefer it that way so we can invite people over or have leftovers for lunch throughout the week. 

What you’ll need:1 pound of chicken tendersgarlic salt1 can cream of chicken soup4 cups of water & 4 bouillon cubes((or))4 cups of chicken broth
1/2 of a yellow or white onion, chopped1 can of petite diced tomatoes1 can of corn, drained1 small can of diced green chiles
Topping Options:Shredded cheeseDiced green onionsAvocadoCilantro
Directions:1. Add bouillon cubes to water in a pot, turn to medium-high heat.2. While the bouillon cubes are dissolving, cook the chicken tenders until browned & cooked throughout. I season mine with garlic salt. Shred or cut into small pieces. 3. Add remaining ingredients, including chicken into the pot and give a good stir and turn down to medium heat.*My mom only uses half of the can of cream of chicken soup. I use the whole thing because I like how creamy it makes it. You could also skip it and just make it more brothy. Just FYI*4. Heat until it’s hot, but not boiling…stirring often.5. Add tortilla chips into the bottom of each bowl. I usually crush them a bit in my hand.6. Using a ladle, pour soup on top of chips and top with grated cheese. I’ve also used cilantro, green onions, avocado, and more chips 🙂

*You can make it in a crockpot and let it simmer all day or you can put it in a pot and cook until it’s heated thoroughly. *I’m not usually too concerned about the healthy-factor of bouillon cubes or cream of chicken soup because, well, I think everything is okay in moderation. If you have substitutes, you can definitely use those and I know that it will still taste stellar. *Fresh vegetables are also suitable, but the brilliance of this recipe is the quick, delicious results used from canned and/or frozen veggies.
